At INFINITUM, we pay homage to local and signature cuisine by using km 0 local raw materials. This philosophy is reflected in our five restaurants: Flamma Beach Foodhouse, Pura and Gusto at the Beach Club, The Lakehouse Bistrot and The Terrace at Hills, where chef Jordi Roa personally crafts the menus. Each of these restaurants offers a unique experience that combines tradition and innovation, always focusing on the quality and freshness of the ingredients. Who is Jordi Roa?


Jordi Roa is more than a chef; he is an alchemist of flavors. With a driven spirit and a passion for innovation, Jordi constantly seeks to surprise palates through the fusion of gastronomic concepts. Tasting one of his dishes is a festival of flavors, where delicacy and intensity combine to awaken all senses.


After 8 years working for one of the world's best hotel groups in China, Jordi has absorbed innovative culinary techniques and international gastronomic trends that he now reflects in every dish on our menus.


For Jordi Roa and his team, every creation must be a complete sensory experience. From selecting ingredients to the final presentation, every detail is meticulously cared for to ensure diners have a memorable experience. What characterizes Jordi Roa's cuisine is the perfect harmony between innovation and tradition.

• Jordi, how would you define the dining experience at INFINITUM?

Dining at INFINITUM is dining in nature; it is dining between the sea and the mountains, it is dining in one of the most beautiful places in Catalonia... And, additionally, enjoying a meal based on local products, because here, on the Costa Dorada, we really have everything.


• What was your vision when you took the reins at INFINITUM?

Firstly, this resort is a spectacular place to visit and live. I was especially motivated to complement that experience. I wanted visitors to enjoy Mediterranean cuisine but be surprised by dishes with certain innovative international touches. Having restaurants in three areas allows us to achieve this and offer different proposals. Always, of course, with two premises in mind: luxurious and sustainable gastronomy, and making the customer feel at home with truly attentive service.

• Five very different restaurants. Can we say there are options for all tastes?

Absolutely. We strive to offer gastronomy based on local products with a strong Mediterranean and sustainable component, but that also serves as a gateway to the world. We aim to meet the needs of INFINITUM residents during the week and weekends, as well as golfers and occasional visitors. At The Lakehouse Bistrot, for example, we offer an elaborate menu, as well as a daily menu with healthy, km 0, and seasonal products. But at the same time, those enjoying a few holes and wanting a quick meal can have a quality club sandwich or burger. At The Terrace at Hills, also next to one of our golf courses, we have revamped our menu since March to offer the best Italian cuisine with the impressive views that characterize it.

• And for those who don't want to stray too far from the stunning Beach Club pools?

That's understandable (laughs)... In that case, there are up to three options to choose from. Firstly, there's Flamma Beach Foodhouse, a public restaurant with a large terrace overlooking the sea, the pines, a spectacular place where you can find Mediterranean cuisine with the best local products, fresh fish, and exceptional grilled dishes. The Beach Club guests also have two more informal options, but with our characteristic quality, to enjoy by our infinity pools. These are Gusto Mediterranean Tapas, whose menu, with gourmet snacks and tapas, also includes a wide selection of cocktails and appetizers, and Pura, with healthy, light dishes and a more exotic touch.

• Does being in Tarragona offer privileged possibilities for cooking?

For me, working in the kitchen is a privilege in itself, and it is enhanced by what one, as a professional, knows about cooking and can offer. Here there is fish, seafood, vegetables... Yes, it really is a privilege. On the other hand, I have lived in China for a long time and know Asia well, so I can bring some Asian touches to Mediterranean cuisine, but I also love traditional cooking; the base from grandmothers and mothers, which is where you truly learn, where all who love cooking have started.

• We heard an English newspaper contacted you for your patatas bravas recipe...

[Laughs] Yes, it's true, it's a dish that many people love and, indeed, they wrote to us from England asking for the sauce recipe.

• Will you reveal the secret?

Of course. In any case, the secret is probably eating them here!
